Crispy mid joints (air fryer)

 This recipe is adapted from instagrammer dougdoesdelicious.

Trial
used all mid joints. ingredients ownself adjust accordingly.
wings are abit dry. Has powdery feel on skin



Original recipe :-

Chicken wings        900g
smoked paprika      1 tsp (2g)
garlic powder         2 tsp (5.6g)
cayenne                  ½ tsp (0.8g)
white pepper           ½ tsp (1.2g)
black pepper          ½ tsp (0.7g)
kosher salt             1 tsp (5.5g)
baking powder      1 Tbsp (10.5g)
corn starch             2 Tbsp (21g)
neutral oil               90g

Airfry 425F for 20mins, flip then 15 - 30mins
Oven 425F 50mins, flip halfway

Buffalo sauce ingredients
Plain greek yogurt         240g (1 cup)
hot sauce                        60g (¼ cup)
apple cider vinegar        1 Tbsp (15g)
garlic powder                 ¼ tsp ( approx 1g)
salt                                  ⅛ tsp (0.5g)
ground black pepper       a pinch to taste (optional)

Ranch ingredients
Plain greek yogurt                     240g (1 cup)
garlic powder                             1 tsp ( approx 3g)
onion powder                             1 tsp ( approx 3g)
fresh dill                                     1 tsp (approx 1g)
fresh parsley, finely chopped     1 tsp (approx 1g)
lemon juice                                 10ml (approx 10g)
kosher salt                                  ¼ tsp (approx 1.5g)
ground black pepper                  ¼ tsp (approx 0.5g)

Garlic parmesan ingredients
Plain greek yogurt                         240g (1 cup)
parmesan cheese, finely grated     25g (¼ cup)
garlic cloves, minced                    abt 6g (2 cloves)
extra virgin olive oil                      10g (2 tsp)
fresh parsley, finely chopped         1 Tbsp (4g)
salt                                                  ⅛ tsp (0.5g), or to taste (parmesan is salty, so start small)
ground black pepper                      ¼ tsp (approx 0.5g)
